Hollywood Chicken
1 pound
hamburger
1 onion
3 tablespoons
flour
1 ¾ cups milk
1 can chicken
noodle soup
1 package
potato chips
Brown onion in fat, then hamburger. Sprinkle flour
over hamburger. Add milk, stir and cook. Add soup. Crush potato chips and
put half in bottom of greased baking dish. Add hot mixture. Top with
potato chips and bake at 350 degrees for 35 – 45 minutes.
For Grandson Rick, this was called Batman Chicken. He
liked Batman at the time and wouldn’t eat chicken unless it had something to
do with Batman. Mom would make it after they went swimming because he’d be
so hungry. This was in the days before hamburger helper and was very
filling. |
Cranberry Mold
Cook together
2 cups cranberries. Cook until they pop open and then a little longer. Add
1 ¼ cup water. Cook till soft and then add 1 cup sugar and then cook for 5
minutes longer. Pour while hot over package cherry jello. When half
jelled, put in ¾ cup celery, ½ cup nuts, ¼ teaspoon salt, ½ cup chopped
apples. Pour into mold. |
Apple Dumplings
2 cups flour
1 tablespoon
sugar
4 tablespoons
butter
3 teaspoons
baking powder
2/3 to ¾ cups
milk
1 ½ teaspoons
salt
6 apples
Make a biscuit dough and roll very thin. Pare and core
apples. Fill center with sugar in which a little nutmeg is mixed. Brown
sugar or cinnamon may also be used. Cut dough in strips and wrap around
apples. Dot dumplings with butter. Bake 350 degrees for 30 minutes.

Oatmeal Cookies
1 cup butter
2 cups brown
sugar
2 eggs
1 ½ cups flour
1 teaspoon soda
1 teaspoon
baking powder
½ teaspoon salt
1 teaspoon
vanilla
3 cups quick
oats
Drop by
teaspoonful into a tray of confectioner’s sugar. Roll until covered with
sugar. Put onto an ungreased cookie sheet three inches apart. Bake at 350
degrees not more than 7 minutes.
