 Aramintha Parker Hammond Recipes
 

 

These recipes were found in Cora B. (Hammond) Deal’s recipe book.  Cora was Aramintha's daughter.
I have copied them exactly as spelled and laid out on the page.
 

 

Mother’s Green Tomato pickles

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

Slice 1 gallon of unpeeled green Tomatos and 6 large onions.  A layer of each.
Stir into 1 qt. Vinegar. 
1 cup brown sugar
1 tablespoon each salt – peper & mustard seed.
˝ tablespoon each allspice & cloves.
Cook until tender. Put in cans and seal

Mother’s Pickeled Peaches

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

3 cups sugar,
1 cup vinegar
1 table sp cinnamon & cloves each
˝ cup water
Boil together
Then add peaches.
Cook until tender.
Put in cans and seal.

Mother’s Nut Bread

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

1 egg well beaten,
3 cups sweet milk
1 teaspoon of salt
3 ˝ cups flour
3 teaspoons of baking powder, sifted in flour
1 cup chopped meats
˝ cup raisins
˝ cup sugar
Dust nuts and raisins with flour
Put in tins and let stand to rise 20 minutes

Mother’s Fried Cakes

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

1 cup sour cream
1 tab spoon butter
2 eggs
1 cup sugar
1 tea sp soda, salt & nutmeg
 

Batter Pudding:

(Note:  not sure if this batter pudding or if it's part of the fried cake recipe.
1 pt milk
8 table sp flour
2 eggs
Salt
Bake in buttered small dishes with fruit.
Eat with cream.

Mother’s Salad Dressing

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

Heat ˝ cup vinegar, 1 rounding table sp. Butter in double boiler;
Mix 2 tea sp salt, 1 tea sp flour, 1 of dry mustard, a pinch Cayenn piper or red;
2 or 3 tab sp sugar,
Mix together
Gradually add hot vinegar
Beat 3 eggs & 1 cup cream and add
Cook to a cream
Will keep well

Mother’s Devil food Cake

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

2 sq bitter chocolate
Pour over it ˝ cup boiling water
1 tea sp soda, let stand
Cream 2 cups brown sugar and ˝ cup butter
2 well beaten eggs
˝ cup sour milk
2 cups sifted flour
Beat well
Then add chocolate
Tea sp vinnilla & ˝ tea salt

Hot Beets for Vegetables

(The recipe was written by Cora B. Deal.  It was in between 2 other of “Mother’s” recipes, therefore I think we can assume that this recipe was “Mother’s” as well.)

1 can beets, cut in cubes
Heat in little water
Add 4 tab sp sugar, 4 of Vinegar
Butter size of egg
Thicken with little corn starch

Salad dressing
1 Bordans sweetened can milk
2 eggs beaten
Tea sp salt
1 cup vinegar
Beat well

Mother’s Fruit Cake

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

2 eggs
2 cup brown sugar
˝ cup butter
1 cup sour milk
1 tea sp salt
1 tea sp soda
1 cup Raisins
˝ cup Currents
2 cups flour
1 tea sp cinnamon
˝ tea sp cloves
1 tea sp vinnilla, 2 of lemon ext
Little nutmeg
(can use other dried fruit)
And nut meats.
Bake in slow oven about 1 hour
Makes 2 loaves.

Mother’s Johny Cake

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

2 eggs
1 cup sour cream
1 cup corn meal
1 cup flour
2 tab sp lard, 3 of sugar
1 tea sp salt, 1 scant of soda

Mother’s Pumpkin Pie

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.) 

˝ cup sugar
1 tea sp ginger
1 tea sp cinnamon
2 eggs
1 cup pumpkin
1 cup milk
Mix well and bake

Mother’s Minute Pudding

(The recipe was written by Cora B. Deal and it is entitled “Mother’s ……”, therefore this recipe would have been Aramintha Hammond’s recipe.)

Take as much sweet milk as desired
Let come to a boil
Add a little salt
And gradually add flour until cooked quite thick, like mush
Serve with sweeten cream flavored with nutmeg, either hot or cold
Can be placed in molds if desired

Mother’s Steam pudding

1 cup sour milk
1 egg
1 tea sp soda
Flour for thick batter
1 cup fruit
