Spotted Dog 

This recipe also figures prominently in Jack Aubrey's seafaring diet.  I'll bet the heart doctors love this one.

Ingredients per Serving:

  • 1 ounce of flour
  • 1 ounce of raisins
  • 1 ounce of finely chopped suet (or oil, butter, lard or other shortening)
  • 1 ounce (2 Tbsp) of water
  • If you live in the 21st Century, add 1 tsp sugar and some cinnamon

Steps for Preparation:

  • Mix all ingredients together in large bowl. Dough should be softish, but not runny
  • Put dough on center of clean cloth, big enough to wrap the dough.
  • Wrap or tie the cloth around the dough
  • Steam the dough on a trivet in a covered pan containing some water, or a pudding basin, for 2-3 hours
  • Cut into wedges, and serve warm, with hot custard (AKA thin vanilla pudding), cream, sugar, or in the old days pour some rum over it.
