Note:  None of these recipes requires an oven ... since our boat has a microwave (that we use for pots and pans storage) where the oven should be, we've learned to do without baking although we may try baking on the gas grill some fine day.  Some of these recipes I haven't tried yet.  They're here because they're old seafaring or New England recipes that you just won't find in cookbooks anymore.  Some are recipes we get asked for a lot. 

Some of the old recipes use "suet" (horrors!)  turns out that suet is a special kind of fat found around the liver and kidneys of beef cattle.  It has a very high melting point and it has no substitutes.  Lard, butter and other fats melt at too low a temperature resulting in soggy puddings with no shape ...  yes, it is a saturated fat ... yes, it clogs arteries ... but remember that it was an everyday part of the diet of our forefathers ... and no, it does not have a 'beefy' taste.  You may have to ask your butcher to get it for you since it is no longer common in grocery stores.
