Mary Jo's Tortellini – Spinach Soup 

My sister-in-law is a great cook and loves to cook Italian ... this one of her stand-bys ... can't beat this for throwing together a quick and simple meal.

 

2             8 oz cans                 Italian diced tomatoes

2             qts                           Chicken Broth

1             pkg frozen               chopped spinach

1             16oz pkg frozen       Cheese tortellini (can substitute dried versions)

1            clove                         minced garlic (opt)

¼            cup                           chopped onion (opt)

1/2          tsp                            oregano (opt)

2                                              Bay Leaves  (Opt)

pinch                                        Parsley leaves as garnish (opt)

 

Combine all ingredients in a soup pot.  Bring to boil. Stir to break up spinach block.  Simmer until tortellini are done.
