Carole’s Flat Bread

 

6oz of water (a little warmer than room temp)                                 

1/2 tsp dry yeast

2 cups of flour (1 1/2 white + 1/2 wheat)                                         

1 1/2 tbsp white sugar

1 tsp oregano                                                                                                                       

1 tsp thyme

1 tsp salt                                                                                                                                               

2 tbsp olive oil                                                                                                                     

2-3 oz cans  sliced or chopped black olives (optional) drained   (add olives in last 2 minutes of kneading)

                                                                                                                                                               

  • Combine ingredients and knead 10-15 minutes. 

  • Let rise 1 hour or so and separate into medium sized balls.

  • Flatten and roll out on lightly floured surface to about 1/8" thick (like tortillas).

  • Allow to rise again 15-20 minutes.

  • Cook on a flat bottom fry pan or griddle over medium-high heat, turn once when top side appears bubbled and dry.
