(note:
this is my own version of the Soup Nazi's recipe from an old Seinfeld episode) 3
to 4 skinned and boned chicken breasts cut into bite sized pieces 4
cups fat free chicken broth 1
can of Lite coconut milk 1
tablespoon of extra virgin olive oil 1
teaspoon lemon juice 2
heaping tablespoons of finely chopped garlic 1
medium onion, diced 4
or 5 chopped roma tomatoes 1
finely chopped jalapeno pepper (or substitute 1 can of mild Rotele diced tomatoes
with chilies for both tomatoes and jalapeno) 1
medium carrot thinly sliced (to make 1/2 cup) 1/2
medium green bell pepper 1/2
medium red bell pepper 1/2
medium yellow bell pepper 1/2
medium orange bell pepper
(or any combination of the above to make 2 medium bell peppers worth) 1/2
cup of whole cashews 1
medium apple peeled, cored and diced to bite sized 1
heaping teaspoon curry powder 1/4
teaspoon of crushed fennel seed 1/8
teaspoon mace 1/8
teaspoon ground clove (or substitute 1/4 teaspoon allspice for the clove and
mace)
