Captain Ron's Mulligatawny

 (note:  this is my own version of the Soup Nazi's recipe from an old Seinfeld episode)

3 to 4 skinned and boned chicken breasts cut into bite sized pieces

 4 cups fat free chicken broth

1 can of Lite coconut milk

1 tablespoon of extra virgin olive oil

1 teaspoon lemon juice

 2 heaping tablespoons of finely chopped garlic

1 medium onion, diced

4 or 5 chopped roma tomatoes

1 finely chopped jalapeno pepper (or substitute 1 can of mild Rotele diced tomatoes with chilies for both tomatoes and jalapeno)

1 medium carrot thinly sliced (to make 1/2 cup)

1/2 medium green bell pepper

1/2 medium red bell pepper

1/2 medium yellow bell pepper

1/2 medium orange bell pepper   (or any combination of the above to make 2 medium bell peppers worth)

1/2 cup of whole cashews

1 medium apple peeled, cored and diced to bite sized

 1 heaping teaspoon curry powder

1/4 teaspoon of crushed fennel seed

1/8 teaspoon mace

1/8 teaspoon ground clove (or substitute 1/4 teaspoon allspice for the clove and mace)

 

  • In a 6qt or larger soup kettle …

  • Lightly brown chicken in olive oil, remove from pot and reserve

  • Clarify onions and garlic in remaining oil

  • Add chicken broth, chicken and everything else except coconut milk, apples and cashews

  • Cook for 20 minutes (low boil)

  • Reduce heat

  • Add apples, cashews and coconut milk simmer on low heat 10 more minutes

  • Taste test spices

  • Garnish with parsley & serve

 

Makes 6 to 8 servings at about 6 points on Weight Watcher's

 About 235 calories

            9 grams of fat

            11 grams of carbs

            2 grams of fiber

            Lots of vitamins
